Abstract
This article aims to present some foods that the ancient pre-Hispanic settlers had at their disposal since before the beginning of agriculture, and the diversification of these over time, highlighting the main crops during the time prehispanic and and the symbolism that some of these possessed, continuing with the foods that entered during the colonial era, thus integrating European, African and Asian cuisine, highlighting the fruits that the American continent provides to the rest of the world, ending with the gastronomic diversity that El Salvador has.
